Along with tofu, you might want to check out TVP (Textured Vegetable Protein). I'm not a huge tofu fan--but TVP gets around what bugs me most, which is the squishy texture. It's more like crumbled/ground meat, but it's all non-animal, and correctly seasoned you can sometimes barely tell it's not meat.
I think you should totally post about your adventures in tofu. :)
Also, hurray for piano-playing! I shall pray that you find accompaniment easier than you remember, and that even your learning curve doing it will be fun.
