You know what?
I was writing something today (just personal ponderings), and I ended up writing about one of the reasons I really like Jensen Ackles.
Jensen is a "mom." Well, not really a mom, of course, but a caregiver. He takes care of his friends. And he does it without thinking.
It's automatic.
When Jared does something dumb like chew gum and drink coffee, Jensen gives up his coffee lid (specifically starting at 2:48):
When Jared breaks his chair, Jensen trades chairs with him (specifically starting at 1:18):
And when Misha needs his collar tucked in in the middle of an interview, Jensen stops and straightens him out (I do not vouch for spoilers in this vid, but the important part is at the beginning):
In short, if you are Jensen's friend, he will take care of you. That's a very attractive quality in a person.

You can tell in the second vid that Jim Beaver is a dad. :-)
That's why I said caregiver. Because obviously he's not a "mom," he will make a great dad someday I think, and he's very much like a big brother to Jared.

It is a great trait and I'm glad you gave us examples of it. He is a nurturer.

I think it's just part of Jensen's make-up. And quite possibly partly due to his upbringing. He always speaks fondly of his family. It seems to me that he's from a very nurturing, caregiving environment.
He just seems to me to be someone who takes care of those around him, especially his friends and colleagues.
